Low Calorie Vietnamese Iced Coffee

It is warming quickly here in the valley.  When it does, I stop craving hot coffee and long for my iced coffee.  Here is a low calorie, Vietnamese Ice Coffee, that I posted last year.  It is my favorite!!

I love Starbucks Frapps, but I don't love the calories that I have use to have one.  With the hot summer days, I enjoy a cold coffee now and again, and came across this Iced Coffee recipe.  It is easy to make, sweet, and yummy!

I am going to start with the lowest calorie version:

This is what you will need:

1. Cold Coffee-- Make coffee the desired strength; Some make it double strength I am not a coffee drinker,  I just make it normal.  Don't use it until it cools.  I make a pot and refrigerate.

2. 3 Pumps of Davinci or Torani Sugar Free Syrup. At this time, I am using English Toffee, but White Chocolate and Carmel are yummy.  I am sure there are others too.

3. 1 TBSP of Sweetened Condensed Milk (This is what makes this a Vietnamese Coffee)

4. 1/4 cup Unsweetened Almond Breeze
OR Fat Free Half and Half (I will give you the recipes for the different variations)

5.  1 Packet of Sweetner ( depends on how sweet you like it)

6. A cup of ice

Take your cup of ice and put syrup, sweeten condensed milk, almond breeze, and sweetner.  Fill the rest of the cup with your cold coffee.  Stir until creamy looking.

*This is the lowest calorie version: 74 calories per drink.

For some creamier versions:

Cold Coffee
Sugar Free Syrup
1 TBSP Sweetened Condensed Milk
2 TBSP Fat Free Half and Half
*110 calories per drink

Cold Coffee
Sugar Free Syrup
2 TBSP Sweetened Condensed Milk
3 TBSP Fat Free Half and Half
*195 calories per drink

Make a guilt free coffee drink and enjoy the hot weather! :o)

Neglect? Or Just Focusing on Me?!?

I know, my title sounds so selfish......but March 1st I started a challenge with some other ladies for a healthier lifestyle.  Every spare moment I normally have for projects and blogging have been dedicated to exercise and healthier meal planning.  I have so many projects that need to be finalized and posted, but I feel like this is so important right now. (With the normal everyday things that have to be done.)  Yes, I apologize for neglecting Notions with Nonny, and please forgive me, because I have been focusing on me.  A Healthier Me!!

I Am What I am: Miss Amber Nicole

This is my niece, Amber Nicole.  Our family was blessed with her arrival 20 years ago.  Amber is unique and special because she has Down Syndrome.  Today, I want to take the time to highlight her because it is World Down Syndrome Day.  She is very special to us and we love her to the moon and back!!   Take the time to stop by her blog, Miss Amber Nicole, and you will forever be changed.  She will make you smile.....and she will make you laugh! There is nobody else like our Amber!

Skinny Chocolate Banana Fudge Muffins

Don't you just LOVE chocolate?   I know I do!  It is one of my down falls when trying to eat healthier.  The guys in my house love Costco's Chocolate Muffins.  Do you know how many calories they have? 692 calories! (gasp!)  They are horrible!   So I went on a search for a healthier version: Skinny Chocolate Banana Fudge Muffins! And they are as yummy as they sound!

Skinny Chocolate Banana Fudge Muffins
  • 3 large bananas
  • 2/3 cup granulated sugar
  • 1 large egg
  • 1/3 cup unsweetened applesauce
  • 1/2 cup whole-wheat flour
  • 1/2 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup semi-sweet chocolate chips, plus more for topping

Preheat the oven to 375F degrees. Line a muffin tin with baking cups. Set aside.

In a large bowl mash the bananas with a fork.  Mash them very well – no big lumps.  Stir in the sugar, egg, and applesauce.

Mix the flour, cocoa powder, salt, baking soda and baking powder into the wet ingredients. Lightly mix to combine.  

Fold in chocolate chips. The batter will be a little chunky. Do not over mix.

Divide the batter between the 12 muffin cups – fill them all the way to the top. 
Sprinkle Chocolate Chips on Top.

 Bake for 18-20 minutes or until a toothpick inserted into the middle comes out clean.  Allow muffins to cool for 3 minutes, then transfer to a wire rack to cool completely.

Chocolate Goodness!! They turned out scrumptious!!

 Mmmmm! They are as good as they look! And only 185 calories each!! Much better than Costco!!

 Makes 12 Muffins
185 calories Each

Healthier Lifestyle with Nonny

There are so many blogs right now with weight loss challenges.  It really helps to know that there are others working hard with you to become healthier!  To keep myself accountable I have been journaling on my Healthier Lifestyle page.   Today was weigh day! (the day I dread, because I don't want to be disappointed)  Well, it wasn't too bad.  You can check it out here!

One thing I learned this week....you burn more calories on an elliptical then you doing walking. (3.0mph)  Next week I will be changing up my routine, because more is better. Right?

On my way now to Pismo Beach.  Walking on the beach should burn a few calories! :o)
