I boldly proclaimed to my family, that this weeks dinner menu, was going be healthier. {Yes, I got that look. It is rough having three men in the home to feed that do not need to lose weight.}
I promised them that it would be edible. {I hoped!}
I found this recipe online. The guys love Buffalo Chicken, so I thought this could be a winner.
Here is what you need:
Ingredients
- 8 oz boneless, skinless chicken breast, cooked and shredded
- 1/4 to 1/2 cup hot sauce (more or less to taste)
{ I used Frank's Red Hot Buffalo Sauce}
- 3 oz fat free cream cheese, softened
- 1/3 cup chopped green onions
- 2 cups Corn Flakes cereal, crushed
- 1/2 cup liquid egg substitute (like Egg Beaters)
- 1/2 cup whole wheat flour
Instructions:
Preheat oven to 350F. Line a large baking sheet with parchment paper.
In a large bowl, combine chicken, cream cheese, hot sauce, green onions
Roll mixture into a 1-1 1/2 inch balls and place onto a plate or
separate baking sheet. Repeat with the remaining mixture, until you have
30 balls in total.
Place flour in a shallow dish.
In a second shallow dish, place egg substitute.
In a third shallow dish, place corn flakes.
Dip each chicken ball first into the flour, then the egg and ending with the Corn Flakes.
Place on the prepared baking sheet and bake for 20 to 25 minutes.
Serve warm with a low calorie ranch or blue cheese dressing.
The guys actually liked this. I thought it was very yummy! The only thing I would do different is not put green onions in the chicken next time, but onion powder. The guys hate onions in any form and were good sports for eating them at all. The eldest said that the bites reminded him of a Buffalo Chicken at Cheesecake Factory.
