Cinnamon Rolls, Ruffled Scarves, & Bible Quizzing! Oh My!

I know I haven't posted lately, but I have been busy with some really great things.

This weekend our church hosted a WPF Bible Quizzing Tournament.  I made 100 cinnamon rolls for our bible quiz team to sale.  It was a day long project. I love to make cinnamon rolls, and of course eat them, but NOT the clean up!!  Sooo messy!


I made my first Sashay ruffled scarf last week! I love the elegance that they add to any outfit.


Spent some time helping at the bible quizzing tournament.  Our church quizzed, plus several friends and family. There was 44 teams from all over California there.  I love this programOur family was involved with quizzing for over 10 years.  It brings back a lot of fond memories of my boys quizzing. 

My uncle's church, Truth Tabernacle of Paso Robles, was quizzing here.  This was their beginner team.

It was so neat to see these guys get a 2nd place trophy.  It was their very first tournament and they did so well!

They lost to our church.....Our church took 1st in Beginners! So proud of them!

Here are the highest scoring individuals in beginners: Top two scorers were from our church.  And 5th place was a young lady from my uncle's church in Paso Robles.  They did so good!

My husband's cousin's children were on a Jr Team.  They were undefeated champions of the tournament.  We were so proud of them!! They represented Truth Tabernacle of Paso Robles well!

Miss Madelyn got highest scorer of the whole tournament! You go girl!

Here are the top scorers for juniors....
Highest scorer was family.....and 2nd, 4th, and 5th were from our church.  And 3rd was from our home church in Bakersfield.  They all did awesome!

As you can see my days have not been idle!  Our church is also in revival through this week and I have been really busy with that also.  I have some projects to share, but I just need to get the posts written.  Hopefully soon!

Healthier Buffalo Chicken Bites

I boldly proclaimed to my family, that this weeks dinner menu, was going be healthier.   {Yes, I got that look.  It is rough having three men in the home to feed that do not need to lose weight.}  
I promised them that it would be edible. {I hoped!}

I found this recipe online.  The guys love Buffalo Chicken, so I thought this could be a winner.

Here is what you need:
  • 8 oz boneless, skinless chicken breast, cooked and shredded
  • 1/4 to 1/2 cup hot sauce (more or less to taste)
    { I used Frank's Red Hot Buffalo Sauce}
  • 3 oz fat free cream cheese, softened
  • 1/3 cup chopped green onions
  • 2 cups Corn Flakes cereal, crushed
  • 1/2 cup liquid egg substitute (like Egg Beaters)
  • 1/2 cup whole wheat flour


Preheat oven to 350F. Line a large baking sheet with parchment paper.
In a large bowl, combine chicken, cream cheese, hot sauce, green onions

Roll mixture into a 1-1 1/2 inch balls and place onto a plate or separate baking sheet. Repeat with the remaining mixture, until you have 30 balls in total.

Place flour in a shallow dish.
In a second shallow dish, place egg substitute.
In a third shallow dish, place corn flakes.

Dip each chicken ball first into the flour, then the egg and ending with the Corn Flakes.

Place on the prepared baking sheet and bake for 20 to 25 minutes.
Serve warm with a low calorie ranch or blue cheese dressing.
The guys actually liked this.  I thought it was very yummy! The only thing I would do different is not put green onions in the chicken next time, but onion powder.  The guys hate onions in any form and were good sports for eating them at all.  The eldest said that the bites reminded him of a Buffalo Chicken at Cheesecake Factory.

Number of servings (yield): 6
Serving size is 5 bites
Each serving = 3 Points +

PER SERVING: 139 calories; 2g fat; 16g carbohydrates; 14g protein; 2 g fiber

Biggest Loser Challenge Week 3


 Biggest Loser Journal:
1/14/13: I will take the 2 lb. loss! I got my exercise in for last week, but I really need to log my food better. Working on that this week.  I am also going to work on some healthier recipes.  I hope to have those posted soon.  I do have some recipes here and desserts and treats here if you are interested.

1/21/13  My dad had a health scare, so I spent last week with my parents.  No exercise, therefore I had no weight loss.  I am looking forward to a new week.

Cough, Sniff, & Sneeze

Oh my.....the flu season is definitely in full swing.  The flu has effected so many around me; each one falling like flies.  I was determined I wasn't going to get it. I NEVER get sick.  Yeah right! Today is the first day in two weeks that I don't have a sore throat.  It has been rough!

Did you know that you can track how bad the flu is through Center for Disease Control (CDC)? I wasn't surprised to see that California 's flu activity was high.  You are also able to see what cities are being hit extremely hard.  What do you know! Fresno's flu activity was intense. There are SO many sick in my family and in our church.

I hope you haven't gotten sick, but if  what they say is true, it is inevitable.  There is one thing you can do; my doctor had me start taking 1000 mg of Vitamin C twice a day.  It helps to build up your immunity.  And thank goodness for Dayquil!! I was able to half way function while taking it.
