Have You Tried Laughing Cow?

Laughing Cow is now my new favorite low caloring food! Oh my, it is just yum!
A piece of Pepper Jack Cheese has 110 calories.....a wedge of Laughing Cow, 35 calories!
There are so many flavors and different ways to use it!
Queso Fresco & Chipotle is really good on a Egg Sandwhich. It just tastes like a lot of calories!

Sandwhich Thin--100 calories
1/4 Cup of Eggbeaters--25
1 Wedge of Laughing Cow Light--35
Total 160 calories for a great sandwhich!

Compared to approx. 360 calories 

You also have try this yummy salsa!!


  • 4 wedges The Laughing Cow Light Queso Fresco & Chipotle
  • 1 cup Your Favorite Salsa


Unwrap The Laughing Cow Cheese Wedges and place them in a small bowl. Microwave for about 30 seconds and then stir. Cheese should be warm and melted.
Add salsa to the melted cheese and stir.
Enjoy with your favorite tortilla chips

Customize your Kitchen Aid Mixer

The best ever Christmas gift was my Kitchen Aid mixer.  I love my mixer!
It is a absolute necessity in my kitchen!

Did you know that you can personalize your mixer with vinyl decals? 
Oh my! They are just adorable!!

This is my favorite, but it isn't done with vinyl decals. Custom Strassed (Swarovski) KitchenAid Mixer, $2000

Honey BBQ Boneless Wings

You don't have to give up the good foods in life.....just modify them a little bit!!
Thanks to Hungry Girl, you can have yummy boneless wings! (My weakness at Chili's)

1/4 cup whole-wheat flour
1/8 tsp. each salt and black pepper
8 oz. raw boneless skinless chicken breast, cut into 16 nuggets
2 tbsp. fat-free liquid egg substitute (like Egg Beaters Original)
1/4 cup BBQ sauce with 45 calories or less per 2-tbsp. serving
1 tbsp. honey
2 tsp. Frank's RedHot Original Cayenne Pepper Sauce
1/8 tsp. garlic powder, or more to taste

Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray.

In a wide bowl, mix flour, salt, and black pepper.

Place chicken nuggets in a large bowl, top with egg substitute, and toss to coat.

One at a time, shake nuggets to remove excess egg and coat with seasoned flour. Evenly lay on the baking sheet.

Bake for 10 minutes. Flip chicken. Bake until outsides are lightly browned and chicken is cooked through, about 6 minutes.

In another large bowl, thoroughly whisk BBQ sauce, honey, hot sauce, and garlic powder. Add cooked nuggets and toss to coat. Eat up!

Southwestern Chicken Chili

Serving Size: 8
Calories per serving: 172
Fat per serving: 2.2
  • 1 cup onions, chopped
  • 6 cloves garlic, minced
  • 2 lbs ground chicken breast
  • 3 jalapeno peppers, minced
  • 1 Tbsp dried oregano
  • 1 Tbsp cumin
  • 3 Tbsp Ancho chili powder
  • 6 roma tomatoes, chopped
  • 32 oz chicken broth (low sodium)
  • ½ cup cilantro, chopped (optional)
  • salt to taste
  1. Spray a stock pot with Pam.
  2. Saute onion, garlic and jalapeno over medium high heat.
  3. Add cumin, chili powder and oregano.
  4. Add chicken and cook until nearly browned.
  5. Add diced tomatoes and chicken broth.
  6. Cover, reduce heat and simmer for 20 minutes.
  7. Season with salt and pepper to taste.
  8. Remove from heat. Stir in cilantro.

I am a little apprehensive at the moment. It is that time again, my 6 month check up at the dentist, and I am sitting in the waiting room praying for a clean bill of health. Who wants to have needles and drills in their mouth, right? But, I have learned, you don't have to brush your teeth - just the ones you want to keep. And who wants dentures? So endure I must!

Father's Day

Father's Day is a day of commemoration and celebration of Dad. It is a day to not only honor your father, but all men who have acted as a father figure in your life - whether as Stepfathers, Uncles, Grandfathers, or "Big Brothers."  

Sadly, I was talking to a friend who teaches Sunday School.  They make a bid deal for Mother's Day, but they they do nothing for Father's Day,  because only a few had father figures in their life.  It made me so thankful that I have several men in my life who have been such a inspiration.  

First, my father..... My Dad is very smart and talented.  Even at 79 years old, he can complete a crossword puzzle like no one's business.  I am also thankful for his 20 years of service in the Air Force.  My hero.....fighting for our freedoms.  I love my Dad!

There was also my father in law, who I also called Dad.  He loved me like one of his own.  Dad is in a better place now, but I know this Father's Day will be very hard for his children.  Cherish every moment you have with you father......

And I cannot forget the newest father to the family.....my son, Brent.  He is such a wonderful father.  He loves Millie with all of his heart.....I am so proud of him!

And lastly, my husband......he is the best Dad around.  He loves his boys with all of his heart.   A true Godly father.......loving, guiding, and caring through it all!

I am also very blessed to have others like my Uncle David, Elder, and Pastor.  Also my brother in laws who are wonderful fathers and just like brothers.  And I can't forget my cousin Jeff.....what a fantastic friend and father he is. (Hehe......he has the most practice with baby #5 on the way!)  I can't name them all, but we have so many friends that amazing fathers too. What an inspiration all of these men have been to me and my family.

This Sunday, take the time to celebrate your father.  Even go an extra mile and find a special man in the church who has no one, or maybe no children, but has been a blessing to your family. You will definitely make their day!

Celebrate Flag Day!

I am so proud to be an American!  I am thankful for our freedoms, and this is still the best country to live in. But, as our country changes, and some of our freedoms are being taken away, it makes me want to celebrate our heritage even more!

Tomorrow, June 14th, is Flag Day:

"Flag Day is a day when all Americans celebrate the flag by showing respect for the flag and its makers and its designers. One of the main symbols of the United States of America is the flag.
The original U.S. flag was authorized by Congress on Saturday, June 14, 1777. It had 13 stripes - 7 red and 6 white - that represent the original 13 colonies. There were 13 white stars in a blue field representing a new constellation.
Since 1777, there have been different versions of the flag that have been adopted. The red and white stripes with blue constellation have remained the same. Each state in the union is represented by a 5 point star. The number of stars have changed as states joined the union. There are currently 50 states that belong to the United States of America."

It is our responsibility to make sure that our children our proud of the America that we live in. Take some time this Flag Day, and also Independence Day, to teach our children about this great country we live in!  And put some flags out this Flag Day!
